2 cups sugar
1 cup water
Peel and juice of 1 lemon
2 cups freshly squeezed lemon juice
(about 8 lemons)
Fresh mint, basil or lavender (optional)
Make simple syrup:
Bring ingredients to simmer.
Mix until all sugar is incorporated.
Cool and store overnight.
Mix cooled simple syrup with lemon juice.
Add ¾ gallon of water.
Stir, add in herbs, if using, for additional flavor.
